Clean Eating Recipes – Greek Lemon Chicken

I was recently introduced to the concept of clean eating. This Greek Lemon Chicken is a delicious clean eating choice that is easy to make. And my family loved the meal!
The more I learned, the more I realized that about half of the recipes I was already making would qualify as clean eating recipes. Clean eating means different things to different people, but in it’s simplest form it means eating food with a no additives and with natural ingredients. As I’ve been reviewing my recipes through my new clean eating lens, I have been searching for clean eating recipes with chicken.
Clean Eating Greek Lemon Chicken
If you’re new to clean eating, think of it as eating food that is as close to it’s original, natural state. As my clean eating mentor says, “You should be able to pronounce every ingredient on the label of the product.”
Greek Lemon Chicken can be grilled or baked in the oven. It’s full of fresh, light flavors that go well with a variety of side dishes. I like to serve it with Clean Eating Potato Pancakes and fresh vegetables.
Greek Lemon Chicken Clean Eating Recipe
Greek Lemon Chicken
Ingredients
- 4 boneless skinless chicken breasts
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup extra-virgin olive oil
- 2 tsp dried oregano
- salt and pepper to taste
Instructions
- Cut chicken breasts in half the thickness so they'll cook more quickly.
- Put two lemons in the microwave for 10 seconds on high. Rotate the lemons and microwave again for 10 seconds on high.
- Slice the lemons half-way through the middle. Turn the sliced side up and squeeze lemon juice into a measuring cup.
- Whisk lemon juice, olive oil and oregano together.
- Pour marinade over the chicken in a zippered plastic bag. Place in refrigerator for at least an hour.
- Heat oven to 325F.
- Place chicken in a greased baking dish.
- Bake for 20 minutes or until the chicken is cooked completely through.
