Easy Ice Cream Sandwich Cake

It’s hitting the really hot summer days around here.  When it’s blistering hot outside, my family’s favorite treat is this easy ice cream sandwich cake.  It’s super easy and always a hit.

You can make this cake as large or small as you’d like depending on how many ice cream sandwiches you use.  I use 2 boxes of 12 sandwiches each to fill my 13×9 inch pan.  If you can find the chocolate Cool Whip use that with 2 packages of vanilla ice cream sandwiches.  I haven’t been able to find chocolate Cool Whip this summer, so  I use both vanilla and chocolate ice cream sandwiches and a container of regular Cool Whip.

The hardest part of this recipe is unwrapping all the ice cream sandwiches.  Lay one box out in the pan.

Spread a layer of cool whip on top.  Add the second layer of ice cream sandwiches and top with cool whip.

Add sprinkles to the top.

Pop it in the freezer for an hour or more so it’s firm enough to make it easy to cut.  There you have it.  My family’s favorite summer treat – easy ice cream sandwich cake.  Enjoy!
