Easy Protein Zucchini Bread

This new year I’m making an effort to work more veggies and protein into my diet. I confess that I’m a carb-loving girl. I love potatoes as much as I love cookies. I haven’t met a carb that I didn’t like. I believe in moderation, so I am not giving up carbs, but I am looking for ways to work more protein, fruits and vegetables into my diet (and my family’s diet). This easy protein zucchini bread has been a huge hit with my entire family. You can serve it on its own or dress it up with a chocolate glaze as an easy way to add veggies and protein to breakfast or a snack.

Zucchini bread has always been one of my favorite comfort foods. I like it for breakfast. I like it as a snack (I like it with a yak. I like it like a maniac.) On a favorite snack scale, I’d give zucchini bread a 9. My family gave my original zucchini bread a 5.5, but they give my new protein zucchini bread a 9+ rating.  That’s a ringing endorsement (because my family is brutally honest).  When I tell you that this protein zucchini bread is a huge hit, I really mean it. 

Protein Zucchini Bread Ingredients

1 3/4 Cup Sugar                         3 Eggs, beaten

1 Cup Canola Oil                        3 Tsp Vanilla

2 1/2 Cups Flour                        1 Tsp Baking Soda

1/2 Cup Jif Peanut Powder       1 Tsp Cinnamon

When I discovered Jif Peanut Powder, I knew that I could add it to my favorite zucchini bread recipe to increase the protein and add a subtle peanut butter taste. Jif Peanut Powder is made from peanuts – and that’s it – no added sugar or salt. It has the same amount of protein as traditional peanut butter, but with 85% less fat. That means I can add protein to my zucchini bread and not add sugar, salt or fat. The Jif Peanut Powder if finely ground so it mixed in well with my flour mixture and there was no difference in the texture of the baked loaf.

Mix the first four ingredients together in a bowl. Mix the dry ingredients together in a separate bowl. Combine the two two bowls together; mixing well. Mix the shredded zucchini into the batter.

Pour the batter into two lightly greased loaf pans. Bake at 350F for 50-60 minutes or until a toothpick inserted in the center of the loaf is clean when removed. Cool the bread in the pans for 10 minutes, then remove to a cooling rack.

This easy protein zucchini bread is perfect for breakfast. It’s moist, delicious and has veggies and protein. It’s a sweet bread with a very subtle peanut butter flavor. 

I made a chocolate peanut glaze to jazz it up the  protein zucchini bread for an afternoon snack.

Chocolate Peanut Glaze Ingredients

1/2 cup Powdered Sugar

1/2 cup Chocolate Peanut Powder (It has the same protein as peanut butter, but 85% less fat. It is made from peanuts and contains semisweet chocolate and a dash of sugar.)

1/4 – 1/2 cup Skim Milk

Mix the powdered sugar and Jif Chocolate Powdered Peanut Powder together. Slowly add the milk, a little at a time, and mix well. Continue adding milk until you’ve reached the desired consistency.

You can whip this chocolate peanut glaze up in minutes and it turns this scrumptious breakfast protein zucchini bread into a decadent afternoon snack. Every particular member of my family is a big fan of this protein zucchini bread. They don’t even realize that they’re getting extra veggies and protein, they just know they love the taste. 

I found Jif Peanut Powder and Jif Chocolate Peanut Powder in the peanut butter aisle at Walmart when I was there running errands.

I’ve tried other recipes to sneak veggies and protein into my family’s diet, but this easy protein zucchini recipe is the only one that gets a happy 10 thumbs up from my entire family.   4. I’m right there with you on the carbs. They are my favorite no matter what it is – bread, pasta, potatoes, etc. I’m also a fan of the peanut butter powder. It has been a constant in my smoothies. I’ve never thought to bake with it. That is genius!
