We’ve all heard that breakfast is the most important meal of the day. It’s important to me to provide a nutritious breakfast for my family and find a few minutes for us to enjoy together in the morning. But let’s be honest. I’m a busy mom of three with an active duty husband. Mornings are one of the busiest times of the day for me. Despite all my planning and organizing, mornings in a family of five are always hectic. With two teens at home, it’s important to me that they eat a nutritious breakfast every day while encouraging their independence by making breakfast easy for them to make. Fortunately, this 3-ingredient Pineapple Easy Breakfast Smoothie recipe makes us all happy and gets us ready to start the day.
Mornings were challenging when my three children were young, but mornings with teens (and a busy mom and dad) are challenging in a different way. My husband’s morning starts very, very early. Next I get up, take care of the dog, meet neighbors to exercise for an hour, squeeze some blogging work in, and then start getting ready for the day. My son gets up and makes his own breakfast before I come downstairs. Next my daughter gets up, gets ready and then comes down for her breakfast.
I’ve been encouraging my children’s independence for years and that includes them making their own breakfast and lunch (we take homemade lunch to school) each day. I’ve also recently committed to finding 5-10 minutes for my two children and I to spend together over breakfast each day. Well, at least together in the kitchen getting ready for our day. It’s a great time touch base before the day starts and give each other support.
We’d fallen into boring, only so-so nutrition breakfast habits and sometimes I’d skip breakfast (don’t tell my mom!) because of our busy schedule. I need breakfast options that are easy, quick, nutritious and that we all like and want to eat. Not the easiest combination of requirements. Because nutrition is important, I took time to re-education myself on smart nutrition (I think nutrition is something you should periodically refresh your knowledge on). We’re committing to 7 days of sharing healthier breakfasts together. I hope that after our 7 days, we’ll commit to sharing a nutritious breakfast together every morning, even the busiest of mornings.
I grew up in Hawai’i so I adore fresh pineapple. (We actually lived two streets away from a huge commercial pineapple field). My entire family enjoys pineapple and we love pineapple whip drinks (Have you ever had them? They’re heavenly delicious!). On a dark, cold winter morning, it occurred to me that I could create a Pineapple Easy Breakfast Smoothie that would be nutritious and delicious (and remind me of home).
It’s simple to set the blender out the night before along with the Carnation Breakfast Essentials®, a measuring cup, several glassess and a spoon. This makes it easy for my family (and myself) to make breakfast in the morning no matter how hectic and busy it is.
Pineapple Easy Breakfast Smoothie
Fresh Pineapple – You can used canned pineapple in a pinch, but fresh is, well, fresh and tastes better.
Carnation Breakfast Essentials® Powder – in Vanilla flavor
Skim Milk – You can use a dairy-free milk alternative, if you prefer.
Having Carnation Breakfast Essentials® Ready-to-Drink Bottles on-hand can provide a nutritious breakfast on the run for those days when you don’t even have time to make a quick and easy breakfast smoothie.
Cut the pineapple into small chunks. Smaller-sized chunks makes it easier for the blender to chop up and blend into the smoothie.
Place the pineapple in the freezer for at least 3 hours. Freezing the pineapple and then blending it is what makes the smoothie light and frothy. I usually cut the pineapple up the night before and simply label the container placed in the freezer so my family can easily find it in the morning.
Ingredients
1 cup Fresh Pineapple Chunks that have been frozen
3/4 cup Skim Milk
1 Package Carnation Breakfast Essentials® Vanilla Flavor
Place the pineapple chunks in the blender. Add 1/4 cup skim milk. Blend well. It will be very thick, so be careful to hit the stop button when the blender stops turning. Add the packet of Carnation Breakfast Essentials® and 1/4 cup more of milk. Blend again. Finally add the remainder of the milk and blend well. The entire blending time is less than a minute. Because the smoothie is thick, be sure to stop your blender each time the blades stop turning; stir the Pineapple Smoothie mixture and add a bit more milk each time until it is all well blended
Pour into a glass and enjoy.
Using frozen pineapple makes the smoothie frothy and light with the milk and Vanilla Carnation Breakfast Essentials® makes it rich tasting and creamy, of course, with a fresh pineapple flavor.
This Pineapple Breakfast Smoothie really is amazingly delicious. Delicious enough to make one busy mom and two busy teens take the time to have a nutritious breakfast together.

I love pineapple! I always made breakfast for my girls, although the older one skipped breakfast for more sleep towards the end of high school. Was hard for me, but that’s what she wanted. With my younger girl, I made these muffins she loves, and would cut up fruit. She only sat there for 5 minutes or so, but I loved touching base in the morning.

Amen! 🙂 I almost worked in the pineapple cannery in Hawai’i many years ago so I’m a fan of both, but fresh pineapple is heavenly.
Pineapple is my favorite but I’ve never thought to put it in a smoothie. Cut up fresh fruit and keep it in the freezer for smoothies and always have the vanilla flavored protein powder. I’ll be trying this soon!

Breakfast essentials? Seems quite unnecessary in a smoothie. I always think the whole point of a smoothie is to cram in as much healthy and natural stuff as possible without the need for any processed food. Fruits, milk, yoghurt, oats, seeds etc. I wouldn’t buy it, sorry.

I wonder if other frozen fruits would work. I love smoothies and fruit as well as my 12 year old. She favors strawberry banana and I love peach mango. All of which I believe I could pre purchase and freeze in Ziploc bags so they are ready to go. Ohhhhhh maybe the chocolate breakfast essentials with strawberries!
