Pumpkin Cranberry Bread

One of my favorite treats to make and eat each holiday season is Pumpkin Cranberry Bread.  It’s a flavorful, moist loaf of bread that combines the best flavors of pumpkin and cranberries.  It’s not only a delicious treat for your family, but it makes a wonderful homemade gift.

If you’ve spent any time around here at Organized 31, you know that we try to live a green life.  If you ever visit my house on trash day, you’ll see that my trash bin is 1/3 the amount of recycling bin.  We make deliberate choices to purchase green packaging and to recycle everything we can.  (oh, and you know, I also like repurposed craft projects).   When I learned that Pacific Foods uses  Tetra Pak cartons, I was thrilled.  Their products come in cartons that use 1/3 the packaging of cans.

In addition to reducing the impact on the environment, I was thrilled that the packaging is square (or rectangular).  You may remember how much I I like square containers for organizing and maximizing storage space.  Did you realize you can get so many holiday meal ingredients in a carton?  Now that I know, just imagine how beautifully organized my pantry will be!

I found opening the cartons much easier than pulling out a can opener and worrying about sharp edges on the lid of the can.  With the carton you just push the 4 corners together, tear off the top (or cut with scissors) and open the package.

Once I was done marveling over the packaging, I got right to mixing up my bread.

Ingredients

3 cups all-purpose flour                      2 1/2 cups sugar

2 tsp baking soda                               1 tsp ground nutmeg

1 tsp cinnamon                                   1 cup vegetable oil

2 eggs                                                 2/3 cup water

16 oz pumpkin puree                          16 oz cranberry sauce

Combine flour, sugar, baking soda, and spices in a large bowl.  Add remaining ingredients (expect cranberry sauce), mixing well.  Gently fold in cranberry sauce.

Pour batter into well-greased loaf pans (I used 1 large and 3 small pans).  Bake at 350F for 45 minutes for the small loaves and 1 1/2 hours for the large loaf or until toothpick tests done.  Cool 10 minutes in pan and then remove to wire racks to cool completely.

The bread was a big hit with the family and as my son commented, “I like the tart taste of the cranberries with the pumpkin.”

  1. This recipe sounds so delicious! I love pumpkin and cranberry and the mix sounds great. I think the Pacific packaging is really nice. We live like your family and try to recycle as much as possible. I hate waste. Great post!
