Greek Lemon Chicken

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup extra-virgin olive oil
  • 2 tsp dried oregano
  • salt and pepper to taste

Instructions
 

  • Cut chicken breasts in half the thickness so they'll cook more quickly.
  • Put two lemons in the microwave for 10 seconds on high. Rotate the lemons and microwave again for 10 seconds on high.
  • Slice the lemons half-way through the middle. Turn the sliced side up and squeeze lemon juice into a measuring cup.
  • Whisk lemon juice, olive oil and oregano together.
  • Pour marinade over the chicken in a zippered plastic bag. Place in refrigerator for at least an hour.
  • Heat oven to 325F.
  • Place chicken in a greased baking dish.
  • Bake for 20 minutes or until the chicken is cooked completely through.

Notes

You can also grilled the marinated chicken breasts.
