skinless chicken breasts

freshly squeezed lemon juice

extra-virgin olive oil

dried oregano
salt and pepper to taste
Instructions
Cut chicken breasts in half the thickness so they'll cook more quickly.
Put two lemons in the microwave for 10 seconds on high. Rotate the lemons and microwave again for 10 seconds on high.
Slice the lemons half-way through the middle. Turn the sliced side up and squeeze lemon juice into a measuring cup.
Whisk lemon juice, olive oil and oregano together.
Pour marinade over the chicken in a zippered plastic bag. Place in refrigerator for at least an hour.
Heat oven to 325F.
Place chicken in a greased baking dish.
Bake for 20 minutes or until the chicken is cooked completely through.
Notes
You can also grilled the marinated chicken breasts.
