I think it all started with my Oreo Surprise Cookies, but my friend, Corinne at Wondermom Wannabe, and I have a running competition challenge to come up with new cookies with a surprise inside. Last week Corinne, tagged me after she made Snickers Surprise Cookies, so here is my newest easy and yummy cookie, Rolo Pretzel Surprise Cookies. This one is a little different in that it adds that sweet salty twist that can be so addictive to the surprise cookie genre.
There’s something about these cookies with a surprise inside that are just so much fun. And even better, they’re super easy to make.
You can use any basic chocolate chip cookie dough recipe, but I always use my husband’s Aunt Barb’s recipe. Mix up a batch of dough.
Stack a Rolo on top of a pretzel and wrap the cookie dough around it.
- 2/3 cup shortening
- 2/3 cup butter or margarine, softened
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 2 tsp vanilla extract
- 3 1/2 cups flour
- 1 tsp baking soda
- Square pretzels
- Rolo candy
- Heat oven to 375F. Mix shortening, butter or margarine, sugar, eggs and vanilla thoroughly. Sift dry ingredients together. Stir dry ingredients into butter mixture. Stack 1 Rolo on a pretzel and shape dough around to completely cover. Place cookies onto ungreased cookie sheet. Bake 8-10 minutes until lightly brown. Cool slightly before removing from the baking sheet.
Bake and be prepared to face a pile of heaven.

Hi Susan – No diet for me… I’m in the middle of making chocolate for a small army right now. As a Pennsylvania girl, I must commend you for the sweet and salty combo of the chocolate and pretzel. Where I used to live, the big thing was to put a large pretzel rod in a dish of ice cream. Oh yeah… and I’m laughing hysterically at the little competition you and Corinne at Wonder Mom Wannabe have going on – so much fun to watch the two of you try and out-cookie surprise each other!
