Oatmeal Blueberry Cookies

I’ve just found my new favorite cookie. Really. These oatmeal blueberry cookies are a scrumptious marriage of blueberry muffins and oatmeal cookies. I’d be embarrassed about how easy they are to make if they weren’t so doggone delicious. But luckily for us, they’re both easy to make and delicious. Win-win.
I recently inherited my grandmother’s recipe box. It’s bittersweet every time I see it. I have such wonderful memories of my grandmother and her cooking. You know, those nostalgic childhood memories that involve all the senses and make you smile.
Many of the recipes in my grandmother’s recipe box are ones that I remember my grandmother and my mother making as I was growing up. I’ve also found many new (to me) recipes as I look through my grandmother’s recipe box. My children and I have decided to work our way through the recipe box, trying each new recipe. As we select a new recipe, I imagine my grandmother’s story of why and how she collected the recipe.
Oatmeal Blueberry Cookies
These oatmeal blueberry cookies are unbelievably moist. They taste exactly like a blueberry muffin, but have the texture of a cookie. My children and I have found our new favorite cookie. Really. I’m not sure what the story is behind where my grandmother got this recipe, but I entirely understand why she kept it.
Oatmeal blueberry cookies are perfect for:
- An after-school snack
- A lunchbox treat
- Breakfast on-the-go
- Mid-morning snack
- Brunch
- Coffee or tea time
Oatmeal Blueberry Cookies
Oatmeal Blueberry Cookies
Ingredients
- 1 package blueberry muffin mix
- 3/4 cup quick oatmeal
- 1/4 cup brown sugar
- 1/3 cup vegetable oil
- 1 tablespoon milk
- 1 egg
Instructions
- Preheat oven to 375F.
- Wash and drain blueberries.
- In a mixing bowl, combine all ingredients, except the blueberries.
- Roll dough into 1-inch balls and place on ungreased cookie sheet.
- Press a depression into the center of each cookie. Fill the depression with 3-5 blueberries. Wrap dough to cover the blueberries. Add extra dough if necessary.
- Bake for 8-10 minutes, until golden brown. Cool on wire rack.
If you don’t trust me, trust my grandmother. These oatmeal blueberry cookies are ah-mazing. They’re so-ooo easy to make and will immediately become your family’s favorite cookie, too. We don’t have to tell anyone how easy they are to make. Just sit back and smile over all the compliments you’ll receive.
