I love sharing family traditions and family recipes. There’s something that nurtures the soul and is just plain fun in enjoying a treat and waves of happy memories at the same time. A nostalgic dessert from my family recipe box or a friend’s family recipe box is always my favorite. But as much as I treasure the traditions, I like to add a spin to those recipes and make them my own. I made a mini version of our favorite easy no bake white chocolate cheesecake recipe that is just as delicious as the original, but is now also adorable (why is it that little versions of favorite recipes are just so stinkin’ cute that it somehow tastes better?).
One of the best things about being a military family is all the wonderful friends you make. You meet people from all different backgrounds, cultures and parts of the country. These are friends that you keep for a lifetime, even if you haven’t seen them in years. In addition to treasured friendships, you gain many amazing recipes from all around the country and the world. Each of these recipes are that much more special to me because they represent my friend’s food traditions and have now become part of my family’s food tradition.
I met my dear friend, Terri, when our oldest “babies” became friends in elementary school. Our families became fast friends. Terri made the most amazing no-bake white chocolate cheesecake for us at a family get-together and it immediately became one of my all-time favorite desserts.
As much as I treasure tradition and handed-down recipes, I like to put my own spin on them. I wanted to make a mini version of this no-bake white chocolate cheesecake for a recent neighborhood cookout. With my second “baby” leaving for college this fall, I’ve been feeling even more nostalgic than usual. I’ve been thinking about all those sweet little kid days and happy memories with my babies. My baby still loves Keebler Sandies® Classic Shortbread cookies now as much as she did when she was little. My nostalgia collided with my no-bake cheesecake recipe and voila! I adapted the recipe to use a Sandies Classic Shortbread cookie as the mini white chocolate cheesecake crust. Big happy mama smile.
Easy White Chocolate Cheesecake Recipe
Keebler Sandies Classic Shortbread Cookies or Keebler Vanilla Wafers
16 oz. Cream Cheese, softened
1 cup White Chocolate Chips
8 oz. Non-Dairy Dessert Topping
Keebler Vanilla Wafers Mini for garnish
Beat the softened cream cheese until smooth. Melt the white chocolate chips according to the directions on the package. Add the melted white chocolate chips to the cream cheese and beat well. Gently mix in the non-dairy dessert topping until smooth.
Place a Keebler Sandies Classic Shortbread Cookie or Keebler Vanilla Wafer in the bottom of a foil baking cup. Fill the cup with the cream cheese mixture.
Garnish with toffee bits and a Keebler Vanilla Wafer Mini. They look so sophisticated and quaint at the same time.
