One of the best things about moving around with the military is sampling food in different parts of the country and the world. While stationed in the South, I learned that I really, really like red beans and rice. I love turning to tried and true slow cooker recipes for those busy family life days when I want to make a home cooked meal but don’t have much time. Slow Cooker Red Beans and Rice is one of my favorite slow cooker recipes. It’s perfect for a cold Fall day or any day, really.
I originally got this recipe from 2 dear friends of mine, C. and D and I share it with you below. In the past I’ve added kielbasa sausage to the recipe. This time I popped over to my local Safeway to pick up Hillshire Farm American Craft sausage, which is part of the Hillshire Brands, and try it in my recipe. Adding sausage to a dish is a great way to add protein and flavor to your meal. My entire family agrees that the American Craft sausage noticeably improved the flavor of the red beans and rice. On your next busy day, grab your slow cooker and ingredients in the morning. It’ll only take you about 10 minutes to prepare the slow cooker red beans recipe.
You simply chop the vegetables, slice the sausage and mix everything up in the slow cooker before you run out the door.
Let it cook all day and come home to a wonderful smelling house and meal in the evening.
- 1 lb dried red beans
- 7 cups water
- 1 bell pepper, chopped
- 1 onion, chopped
- 5 stalks of celery, chopped
- 3 cloves of garlic, minced
- 1 package Hillshire American Craft Garlic & Onion Sausage, sliced
- 2-3 Tbps Creole seasoning
- Mix ingredients in slow cooker.
- Cook on high for 7 hours.
- Serve over rice.
- Garnish with chopped bell pepper and celery.
